Basque Cheesecake

This cheesecake has no crust, but is rather cooked quickly in a hot oven, forming its own crust, burning the top and leaving a complex aroma and flavor of caramel and slight nuttiness. It is fool proof and delicious.

Basque Cheesecake (1 cake) 


Ingredients

  • Cream Cheese 2.2 lbs (1kg) 

  • 6 Eggs + 1 yolk 

  • 1.5 cups sugar 

  • ⅓ cup flour 

  • 2 cups heavy cream 

  • 1 vanilla bean 

  • Citrus Zest 

Method

  • Preheat oven 400F. Line a 10’’ springform pan with 2 pieces of parchment. 

  • Combine cream cheese and sugar. Mix with paddle attachment till creamy. About 5 min.

  • Add in eggs one at a time. Scrape the bowl while mixing. 

  • Add in the heavy cream, salt, vanilla bean and citrus zest. Mix and then sift flour. Beat to combine 

  • Add mixture to lined pan and cook for 60 min. Cake should jiggle 

  • Let it cool. Cut and Serve.
